To officially certify the wheat variety used, it is necessary to purchase original seed certified by the competent body annually. Saragolla is an ancient variety of durum wheat native to Central-Southern Italy, belonging to the Triticum genus, subspecies Triticum Turgidum. It derives from wild spelt, the first cereal used by man.

In addition to differing in appearance – it has a nice dark color -, flavor and aroma compared to other durum wheat preparations that we find on the market, Cappelli pasta has different nutritional values.
Among the most obvious differences are the slightly lower caloric intake, but also a lower sugar content.
Its components have remained unchanged over time, making this wheat a pure product, untouched by modern production that has awakened the infamous food intolerances in a large part of the population.
